Salads


Mediterranean Salad

Ingredients


1 cup of salad greens, include bitter green such as rocket or watercress. (Minerals: Calcium, Flourine, Iron, Magnesium and Potassium. Vitamins: Folate.)
1 hard boiled egg (sliced)
(Amino Acids: Cystein,Tryptophan and Valine. Minerals: Calcium, Iodine, Phosphorus, Potassium, Selenium, Sulphur and Zinc. Protein. Vitamins: B2 )
Slices of red onion and cucumber
(Minerals: Potassium, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc. Vitamins: B1, B2 ,B3, B5, B6, C and B9.)
Small can of salmon
(Minerals: Calcium. Vitamins: B3, B5 and B6)
4 black olives (optional)
(Minerals: Chromium. Vitamins: E)

Method


1) Toss salad with one dessert spoon of extra virgin olive oil and sprinkle with vinegar (apple cider, red wine or balsamic) or lemon juice.

Other Variations
To add variety: Blanched green beans, asparagus, anchovies, 1/4 avocado, 1 artichoke, fetta, mixed herbs, over roasted capsicum or eggplant strips and marinated mushrooms.

Fresh Garden Salad


Ingredients


180g of cooked chicken (Amino Acids: Iso-leucine. Minerals: Magnesium, Sulphur and Zinc. Protein. Vitamins: A, B3 and B6.)
1/4 cup of sliced celery (Minerals: Potassium)
1/4 cup of red capsicum (Vitamins: C and A)
1/4 cup of fresh snow peas (Minerals: Potassium)
1 cup of lettuce (Minerals: Calcium and Flourine)
1 avocado sliced
( Minerals: Magnesium. Vitamins: A, B1, B2, B3 and C.)
1 small tomato cut into wedges (Vitamins: A)
Lemon, squeezed
Cracked black pepper
Olive oil with squeeze of lemon

Method


1) Combine all ingredients together.

2) Dress with lemon, tahini, pepper, olive oil and lemon.

3) Serve immediately.
